What are One pot Noodles?
One pot noodles is a recipe in which the noodles are cooked in the same pot in which the vegetables are sauteed. This method saves time and the effort required to clean multiple dishes, making this recipe a delight to cook.
One pot recipes are usually used for making pasta dishes where the sauce is first cooked in a large dish followed by dry pasta noodles and some water or a flavoured stock to cook the pasta.
How to make One Pot Noodles?
1. In a non-stick casserole, add some oil and saute chopped ginger garlic in it. To the pan add some sliced onions, chilli flakes and cubed tomatoes. Saute everything till the onions are translucent.
2. Add water to the casserole and let it boil. Into the boiling water add chopped mushroom, sliced carrots, cubed bell peppers and cubed broccoli. Simmer the pot with all the vegetables.
3. Add soy sauce, vinegar and chilli paste to the pot and season it with salt and pepper. Add some sesame oil before breaking in a cake of dried noodles into the casserole. Cover and cook till the noodles are done.
4. Add a teaspoon of honey to the pot and mix. In a small bowl crack an egg white and whisk it. Turn off the heat and drop in the whisked egg whites while constantly mixing it.
5. Finish it off with some chopped coriander leaves and serve it hot in a bowl.

- Make sure to sweat the onions and tomatoes properly before adding water.
- While dropping the egg white into the noodle pot, turn the heat off or the eggs will over cook.
- Make sure not to over cook the noodles and uncover the pot one stage before they cook.
