Red Thai curry paste has more or less remained the same over time, with traditional Thai chefs adding up to 20 red chilies to give it that red colour and spicy flavour. Green curry is the most popular curry in Thai cuisine. The green colour of Thai green curry sauce has become more vibrant over the years with the addition of fresh cilantro, makrut lime leaf and basil. These herbs are combined with fresh green chilies & several other ingredients such as lemongrass, fish sauce, garlic, ginger & shallots As in traditional Indian curry, Thai yellow curry includes turmeric as one of the important ingredients which gives the curry its typical golden-yellow colour. In fact, some Thai yellow curries resemble Indian curry in appearance while remaining distinctly Thai in taste.

    Step by step guide to make Thai Curry Paneer Tikka

    1) In a blender make a paste of ginger, garlic, basil, honey and chilli. Add refined oil and soy sauce to the paste. This makes the mixture ready for marination. Add some besan and the chopped lemongrass and blend them again until smooth.

    2) Remember there is already a lot of salt in the curry paste and soy sauce, so no additional salt is required.

    3) Pour the marination in a bowl and add in the Cubed Cottage Cheese and the bell peppers.

    4) Arrange the cheese and peppers on a skewer and grill them on a MEYER Grill Pan. The tikkis will get a brownish coating on the outside as the besan cooks.

    5) Once there's an even coating on the outside, take it off the heat and serve hot with a chutney of your choice.
