What is Mutton Rogan Josh?
Rogan josh, sometimes spelled rogan josh or rogan gosht, is a flavorful Kashmiri meal made with curried beef. It is made using red meat—typically lamb, mutton, or goat—and is predominantly coloured and flavoured by Kashmiri chiles and alkanet flowers. It is one of Kashmir's hallmark dishes. The Mughals, whose diet was influenced by Persian cuisine, brought the dish to Kashmir in the beginning. The original method calls for whole dried chilies that are de-seeded, steeped in water, and ground into a paste; other methods substitute Kashmiri chilli powder or a flavour-adjusted blend of paprika and cayenne pepper.

How to make Mutton Rogan Josh ?
1) In a stainless steel milk pan, heat some water and boil Kashmiri dried red chillies for 5-7 minutes. After boiling, strain and blend them into a paste.
2) In a Trivantage kadai, melt ghee and add whole spices to it. Saute them and add sliced onions and fry them into the ghee till they are brown and crispy. Add some chopped ginger and garlic into the onions and incorporate them.
3) Add the cleaned out mutton pieces into the kadai and toss it in the onions. Add red chilli powder, salt and coriander powder into the mutton. Roast the chicken in the spices for 5-7 minutes.
4) Add water in the pan just till it covers the mutton and then cover and cook it for 30 minutes on low heat.
5) Take the cover off and add the prepared chilli paste with some tomato puree, top it off with some more water. Cover and cook the meat on low flame for another 25 minutes.
6) Finally add some saunf powder into the mutton. Turn off the heat and add the yoghurt, mix it together. Cover and let it cook for another 5 minutes.
7) Serve the rogan josh in a metal serving bowl and garnish it with some ginger juliennes.

- Brown the onions properly before adding the mutton.
- Roast the spices and mutton thoroughly to cook off all the dry spice powders.
- The curd is added into the kadai after turning the heat off as it can curdle if heated too much.
