Red velvet is a cake that is red in colour or could also be, red-brown or crimson. The basic flavouring in this cake comes from buttermilk, vinegar and cocoa powder. The simple cake batter is used to make many different variations of cake like swiss rolls and cupcakes. Traditionally the red velvet cake was accompanied with French buttercream that is made by mixing butter and sugar, but now as the taste developed and became more popular, the modern versions of the cake are made with cream cheese frosting.
With this simple and quick recipe, you can prepare your own red velvet cupcakes as and when you want them, with a tasty and convenient cream cheese frosting. Either be it a dinner party, a birthday party or if it's just a random gloomy day, these red velvet cupcakes are just the recipe for you. They can make your guests fall in love with your cooking or lift up their mood with just a bite.
Start by preheating your oven to 180 degree celsius. Mix the refined flour, cocoa powder, baking soda and salt into a bowl and mix it all together.
In another bowl, add buttermilk, vegetable oil, vanilla extract and food colouring and mix it using an electric hand mixer.
While mixing, add the eggs one by one, add the vinegar and caster sugar and mix it all together.
Now finally add the dry ingredients and mix it all with the electric mixture.
Portion out the batter into a cupcake tray using an ice cream scoop and bake it in a preheated 180 degree oven for 20-22 minutes.
In a separate bowl add the cream cheese frosting and butter with vanilla extract and whip them together.
Once the cheese is fluffy enough, add the icing sugar, while simultaneously mixing them together.
Once the cupcakes are out of the oven and cooled down, frost them with cream cheese frosting with the help of a piping bag.
