How to Make Mushroom Galouti Kebabs

 

  1. Start by blanching the mushrooms in boiling water for 4-5 minutes, then strain and make a paste from them.
  2. In a kadhai (deep pan), heat 3 tbsp of sesame oil. Add the sliced onions and caramelize them over medium heat. Once the onions are halfway done, add garlic and cashews, and continue caramelizing until the onions turn a light golden color.
  3. Grind the onion-garlic-cashew mixture into a smooth paste and mix it with the mushroom paste.
  4. In the same kadhai, add more sesame oil, red chili powder, garam masala, coriander powder, salt, and Lucknawi Kebab Masala. Sauté the spices for 1 minute before adding the mushroom-onion paste.
  5. Cook the mixture for 2-4 minutes, stirring frequently, then add sattu powder and sauté for an additional 5 minutes to bind everything together.
  6. Once the mixture is done, allow it to cool slightly. Shape it into small round kebabs (tikkies) and shallow fry them for 8-10 minutes, until golden brown on both sides.
