Tips for making thin Crepe cakes
The best trick to prepare delicious crepe cake is having consistent paper thin crepes.
Here are a couple of tips for creating the thinnest, most delicious crepes!
- Use a blender
- Pour the batter through a sieve. This ensures a smooth batter for consistent and lump free crepes
- Allowing the batter to rest overnight in the fridge allows the gluten strands in the flour to relax, resulting in a tender crepe.
- If you want the crepes to be uniform in thickness, measuring the crepe batter is essential! We suggest using a ¼ cup to measure & pour the batter into the pan.
- It is important to cook your crepes on a lower heat to prevent them from burning & drying out. Keep an eye on your crepes & flip them as soon as the surface appears matte and smooth.

- Milk- to make the batter mix better

- Custard powder - to thicken the batter with flavour
- Flour - to prepare batter
- Eggs - to bind the batter and give flavors
- butter - 1/2 cup
- Mango jam - 1/2 cup
- Fresh cream - 3 tbsp
- Fresh mango - 1
- Icing sugar - Garnish
Step by Step Guide to prepare recipe
1) Dissolve custard powder in 100 ml of milk and make a smooth paste.
2) Heat the residual milk and add the custard paste to it while stirring till it thickens.
3) In a bowl whisk eggs, flour , milk, sugar , melted butter until smooth and runny.
4) Heat a non-stick pan and make thin crepes by pouring one ladle of batter at a time.
5) Prepare 8-10 crepes and keep aside.
6) In a saucepan, heat mango jam along with fresh cream and chopped mangoes and combine till it reaches a sauce consistency.
7) Alternately layer the crepes and custard and make a stack.
8) Top it off with the mango sauce and garnish with icing sugar and a sprig of mint.
Expert Tip : If the crepes are too thick they will give your cake a gummy texture & if they aren't consistent you'll have crepes of differing thicknesses throughout your cake cross section.
