How to make Chicken Meatballs in Mushroom Sauce

  1. We’ll start by making the mixture for the meatballs. For this add all the wet and dry ingredients in a large mixing bowl along with the chicken keema.
  2. Mix the ingredients together until well combined and the mixture is able to hold its shape when formed into small balls.
  3. Now we’ll make 1.5 inch balls from the mixture and place them in a well oiled dish.

Let the meatballs marinate for 30 minutes upto 4 hours in a covered dish.

  1. Now to sear the meatballs, add 1 tablespoon of oil in a stainless steel pan. Start by placing the meatballs in the pan over medium heat and let them cook for 3 minutes on each side or until 90 percent cooked.
  2. Once the meatballs are done cooking, remove them from the pan and keep aside. In the same pan heat 2 tablespoons of olive oil over medium heat and add the thinly sliced garlic and finely chopped onions.
  3. Once the garlic is slightly cooked add in the chili flakes and cook for 60-90 seconds. Add the mushrooms and cook for another 5-7 minutes until the mushrooms have softened.
  4. Add the vegetable stock in the pan and cook until it reaches a light simmer, then add the cream and allow the sauce to simmer for a few minutes.
  5. Now place the meatballs into the sauce and continue to cook for another 5 minutes or until the meatballs are fully cooked and the sauce is fully developed.
  6. Taste the sauce and add salt and pepper to taste. Finally garnish with finely chopped parsley and serve.

Expert Tips

  1. Make sure to use good quality chicken mince with at least 15-20 percent fat in it to get nice and juicy meatballs.
  2. Make sure to place the meatballs in a hot pan in order to seal in the juices and to avoid having dry or rubbery meatballs.
  3. Elevate your sauce by adding different flavors like different types of cheeses or olives into the mix. Try using different types of mushrooms for a umami packed and flavorful dish.
  4. We would recommend using homemade vegetable stock rather than a store bought one for a much fresher and natural flavor.
  5. Play with different garnishes to add different textures or flavors to your dish. Try using different types of cheeses or fresh olives.
