- We’ll start by making the mixture for the meatballs. For this add all the wet and dry ingredients in a large mixing bowl along with the chicken keema.
- Mix the ingredients together until well combined and the mixture is able to hold its shape when formed into small balls.
- Now we’ll make 1.5 inch balls from the mixture and place them in a well oiled dish.
Let the meatballs marinate for 30 minutes upto 4 hours in a covered dish.
- Now to sear the meatballs, add 1 tablespoon of oil in a stainless steel pan. Start by placing the meatballs in the pan over medium heat and let them cook for 3 minutes on each side or until 90 percent cooked.
- Once the meatballs are done cooking, remove them from the pan and keep aside. In the same pan heat 2 tablespoons of olive oil over medium heat and add the thinly sliced garlic and finely chopped onions.
- Once the garlic is slightly cooked add in the chili flakes and cook for 60-90 seconds. Add the mushrooms and cook for another 5-7 minutes until the mushrooms have softened.
- Add the vegetable stock in the pan and cook until it reaches a light simmer, then add the cream and allow the sauce to simmer for a few minutes.
- Now place the meatballs into the sauce and continue to cook for another 5 minutes or until the meatballs are fully cooked and the sauce is fully developed.
- Taste the sauce and add salt and pepper to taste. Finally garnish with finely chopped parsley and serve.
