Carrot And Ginger Soup

Ingredients
Olive oil - 1 tbsp
Garlic - 3-4 cloves
Onion - 1
Ginger - 1 knot
Carrot - 2
Dried basil - 1 tsp
Cream - 1 tsp
Butter - 1 knob
Method
1) In a Forgestone Saucepan, add the oil and saute the onions and garlic in it.
2) Once the onions become soft, add in the sliced carrots and julienned ginger and saute.
3) Cover the vegetables with water and let them reduce till half or till the point when almost all the water is evaporated.
4) Blend the carrot and the onion in a blender into a fine puree.
5) Put the sauce pan back on heat and add butter to it.
6) Add the blended puree to it and combine the butter through it.
7) Add a bit of water to give it a soup consistency.
8) Season the soup with salt and pepper and a bit of dried basil.
9) Serve the soup in a bowl and garnish with coriander leaves and drops of fresh cream.
