Asian Vegetable Fritters
We all need to have a quick chinese recipe and what better to have for your breakfast needs. These vegetable fritters are similar to chinese savoury pancakes but have the spicy and juicy taste of vegetables and get ready in just under 15 minutes.

How to make Asian Vegetable Fritters?
1) In a large bowl add refined flour, baking powder and a whole egg. Whisk everything together and add some coconut cream and water to adjust it to the correct consistency.
2) Season the batter with salt and pepper. Add some boiled green peas, corn kernels, chopped garlic, and onions, chopped mushrooms, chilli paste, sesame oil, soy sauce and refined oil. Add some jalapeno slices and mix them also.
3) Heat a nonstick dosa tawa and drizzle a generous amount of refined oil over it. Pour dollops of the thick batter on the hot tawa and let it shallow fry for 3-4 minutes on both the sides.
4) Serve these fritters hot and garnish them with chilli flakes, with a side of ketchup.
Expert Tips
- The egg is a necessary ingredient so that the fritter holds its shape.
- Do not make the batter too wet or it wont coat the vegetables completely.
- If you want you can also garnish the fritters with some chilli oil.
