Orange and Mint Pie


 

Just like the classic lemon meringue pie, this is an orange pie that follows a similar pattern but with a more sweeter citrus flavour, along with the addition of mint. All these fresh flavours in a crispy and flaky pastry crust make this a perfect slice of pie!


How to make Orange and Mint Pie 

1. Start by mixing the pie dough in a bowl by adding refined flour sugar and softened butter. Incorporate them all together into a cohesive dough. Take a non-stick pie tin and press the dough into it, spread it evenly and blind bake it in a preheated 180 degree oven for 20 minutes.

2. To prepare the orange curd, crack the eggs in a clean bowl and add sugar, orange juice, refined flour and lemon zest, with some mint leaves. Mix it all together using a whisk.

3. Pour the orange curd into the blind baked pie shell and bake it all for another 20 minutes in a preheated 180 degree oven.

4. Once baked, let the pie rest till completely cool, then slice it up and enjoy.

Expert Tips

  1. You can use a piece of pastry to press the dough into the mould for a smoother surface.
  2. Blind baking is necessary so that the pie doesn't swell up in the main baking.
  3. It's very important to let the pie cool down before cutting into it so that it sets properly.
