How to make Baked Cheesy Vegetables
- In a Trivantage kadai, heat some oil, add ginger garlic paste and saute. To the sauteed paste add some of the tomato puree and mix it together. Add some red chilli powder to the kadai and cook it evenly. *
- Once the masala is cooked, add the remaining tomato puree into it. Add some water and season it with salt to taste. Cover and cook til the oil separates for around 5-8 minutes.
- Stir in the mixed herbs, as well as chopped zucchini, sweet corn, sliced bell peppers, blanched broccoli and a cubed potato. Season the vegetables with salt again and stir them into the sauce.
- Add a little water, cover and cook the vegetables for 5-6 minutes. Transfer the vegetables into a cast iron skillet and top them off with some grated mozzarella cheese and a cheese slice.
- Top the whole thing with some more of the tomato sauce and bake them in a preheated 200 degree oven for 10-12 minutes.
- Take it out of the oven once the cheese is browned and melted. Let it rest for a few minutes and then dig into it.
