What is Fusilli Pasta in Mushroom Sauce ?

​​Fusilli is a pasta shape that is easily recognizable through its classic spiral design. This pasta in itself has many different varieties with some being hollow and shaped through a corkscrew. In this recipe, the pasta is served in a mushroom sauce, which has mushrooms added in two stages. First a blend of cooked mushrooms and onions with butter is made. Secondly, Some sliced mushrooms are sauteed with onions and cherry tomatoes, and then thickened with the blended mushroom sauce made earlier.

 

Quick and Easy Fusilli Pasta in Mushroom Sauce

This is one of those pasta recipes that are done in a short time, but pack ample flavours. The creamy pasta sauce is layered with different textures and flavours of mushrooms. The addition of the sweet cherry tomatoes and fresh basil add another depth of flavour to the perfectly cooked pasta.     How to make Fusilli Pasta in Mushroom Sauce?

    1) Start by adding water to a Meyer Stainless Steel Milk Pan for boiling pasta. Season the pasta water with salt and add a few drops of olive oil to the water.

    2) Add the pasta to the boiling water and let it cook for 8-10 minutes. After the pasta is cooked to the al dente stage, strain it and save some of the pasta water.

    3) In a separate Meyer Fry Pan, add a cube of butter and drizzle some olive oil on low heat. To the butter and oil add 2 tsp of chopped garlic, 1 chopped onion and 100 grams of chopped mushrooms.

    4) Cook the vegetables on medium heat for a couple of minutes and then add a splash of water to deglaze the pan. Reduce the mixture and add some fresh cream to the mushrooms. Mix it together to form a sauce.

    5) Add some reserved pasta water to the mushrooms to thin out the sauce and season it with some pepper. Blend the mixture into a paste and set it aside.

    6) In a clean stainless steel pan, add a cube of butter with a drizzle of olive oil. Toss in some sliced mushrooms and saute them. Following that, add some halved cherry tomatoes and a handful of fresh basil leaves.

    7) Saute everything with some reserved pasta water and the blended mushroom paste. Mix it all together and add your boiled fusilli pasta to it. Toss the pasta thoroughly in the sauce and serve it hot in a bowl garnished with some fresh basil and chilli flakes.

    Expert Tips

    1) Make sure to season the pasta water properly or the pasta would be bland.

    2) Make sure to save the pasta water, as it has some starch to thicken the sauce.

    3) Do not overcook the pasta or it will break apart in the sauce.
