Potato wedges are thick sliced potatoes, unlike French Fries, which are thinly cut batons of potatoes. They are called wedges because of the shape in which they are cut. They are brown and crispy from the outside, while the insides remain nice and fluffy. Potato wedges are generally served as an accompaniment with fried fish or chicken and form a classic dish called fish and chips.
This recipe does not have any fancy ingredients but a great technique. So, you can get perfectly crispy potato wedges, using just 2 ingredients. The potatoes are baked in the oven beforehand, which ensures perfectly cooked potatoes from the inside, giving you the best fried potato experience.
1) Start by preheating your oven to 200 degree Celsius. Take two large potatoes and using a toothpick, prick the potato all over
2) Place the potatoes in a Baking Tray and put them in the preheated 200 degree oven for 40-45 minutes. They will be all wrinkled and a little soft once they come out.
3) Refrigerate the potatoes till they are completely chilled. Take the chilled potatoes and cut them into even sized wedges.
4) Heat oil for frying in a small kadai. Fry the wedges in batches, on high heat for about 5-6 minutes or until they are golden brown and crispy.
5) Serve them hot once they come out and sprinkle some salt over them.

1) Make sure you prick the potatoes all over or they might burst through the heat pressure.
2) The longer you chill them, the better texture you get inside.
3) The salt in the end is necessary, as the salt over fried food absorbs the excess moisture.
