Chargrilled Bell Pepper and Jalapeno Soup


Who doesn't love to try a new soup every now and then? If the soup is warm, peppery, tangy and all of this made in just 25 minutes, it's gonna be a delight to make. Chargrilled bell pepper soup with some jalapenos is the perfect combination given in this easy recipe.

What is Chargrilled Bell pepper and Jalapeno soup?

A bell pepper soup istn made like the traditional french cream soup that has a thickening agent. Instead of that, the bell peppers are chargrilled in a pan on a griddle so that the outside skin becomes flavorful and the flesh inside becomes soft and tender. These peppers are cooked in a stock among other vegetables and till they are perfectly cooked. Everything is blended together and thick vegetables are the base of the rich soup that makes it thick. The soup is finally enriched with some heavy cream or cold butter and served hot.

 

How to make Chargrilled Bell pepper and Jalapeno soup?

1) Heat a cast iron grill pan and drizzle some olive oil into it for grilling. Add 4 whole bell peppers to the hot pan and grill them till they have char marks all over them.

2) On the same hot pan, grilled some quartered onions till they browned and softened. In a non-stick saucepan, add olive oil and garlic cloves, grilled onions, chopped carrots and the charred bell peppers.

3) Add some water to the pan and let them cook for a while. Add some sliced jalapenos into the pot, with the coriander stems and dried basil leaves.

4) Blend the vegetables into a fine paste and transfer it back into the casserole. Season the soup with salt, pepper and paprika.

5) Finish the soup off with some heavy cream and serve it in a deep bowl, garnished with some chopped jalapenos.

Expert Tips

  1. Don’t skip the charring part as it adds a lot of flavour to the regular peppers.
  2. The vegetables added to the pan should be of the same pigmentation to achieve a bright orange end product.
  3. You can increase the flavour of jalapenos if you like that.
